I think your new boss was just kidding or joking with you, just to see if you know much, or what you might say. LOL I wouldn't argue with him though. And, Maybe he doesn't know as much as he thinks!

Stallions are always males that are unfixed and can breed with a mare and make a baby. Geldings are males that have been fixed or cut or castrated. It usually makes them settle down a lot and sometimes they grow bigger!
A mare is a female.
A filly is a baby female!
A stud is a baby male.

Good luck with your new job!
I hope I helped you!
References :
me

Stallions are male horses.
Geldings are male horses who have been castrated (the equivalent of neutered)
Mares are females. All females are mares.

Stallions can be dangerous and unpredictable, therefore they are not recommended for beginner riders and are often not allowed at stables
References :
I think your boss may be a bit of a joker. Could be fun to work for.
A stallion is a male horse with all it's bits intact. Nothing else.
References :
Your "boss" misdirected you. Stallions can ONLY be a male horse that has not yet been fixed. A fixed or castrated male is called a gelding and a female horse is called a mare.
